It may be considered a morning food,
but I can eat them all the time, and I do. In fact, today I had them
for dinner. A friend had to bring over some eggs, and being the pancake
snob I am, I made them from scratch, starting with flour and sugar,
adding eggs and milk and a touch of cinnamon to make them just right.
Talk about heaven in your mouth! I can see why they call them a breakfast food. Nothing beats waking up to the smell of pancakes frying on a slightly greased pan. The butter! The syrup! All coming together in a swarm of greatness making my life ten times better with their sweet goodness. They also fill you up more than most foods. It is like the fried bread hits your stomach and expands, leaving you unable to move and as full as a large pregnant woman in a cake bakery. Being diabetic, I have to be careful with the syrup, but all the caution is worth the reward of that first bite. Pancakes can be put on the same level as world peace. In fact, I think that if everyone in the world started eating pancakes on a weekly basis, the planet would be a better, much happier place. People would go out into the world with a different outlook on life, and they would pass their warm good feelings on to others. Pancakes are the solution to most of the world’s problems, but people will never see it that way. So to the inventor of pancakes I give five respectful solutes. You have made my life, and the lives of many better with your wonderful nourishing food product. Pancakes are the greatest things ever, and I think I might have to whip up another batch right now. How to make basic pancakes: 1 2/3 cups all-purpose flour Using a whisk, combine flour, eggs, sugar and yeast diluted in warm water and in medium bowl. Stir in the milk gradually and allow the batter to rest, covered in a warm place, for at least 30 minutes. Pour half a ladle of batter onto a hot, greased griddle to form of 5 inch diameter pancake. Allow to cook until the center of the batter is set (approximately 30 seconds). Using a spatula, flip the pancake and cook the other side 30 seconds or until done. Serve pancakes with maple syrup, melted butter, brown
sugar and cinnamon, fresh or canned fruits, jams or jellies.
